The Wedding Cake - easier said than done!


Wedding cake is one of the key components of most weddings - in the West anyway. Tom and I had different requirements for the wedding cake through. I wanted a cake which was not only tasty but most importantly was healthy to eat - absolutely no GMO (Genetically Manipulated Organisms) which are commonly found in cakes today (margarine from corn or other gmo-crops, butter from cows who have been fed gmo-crops, gmo-beet sugar, eggs from hens fed gmo-crops etc). Ideally also gluten-free.
Tom was ok but this but more importantly for him was a very nice looking cake. His mom actually used to make wedding cakes for many weddings and she made the most gorgeous cakes imaginable, so his standards were set high!
We actually tried for more than half a year to find a cake-maker who could satisfy both of our requirements. It was very difficult since most people still don't even seem to know what GMO is or why it should not be in a cake. It was not until less than a week before the wedding, that we got lucky! A baker in town mentioned she'd heard of a bakery in a nearby town which baked allergen-free cakes. I immediately called, texted and sent her a chat on Messenger, and after some discussions about ingredients she agreed to make the cake for us. In order to avoid beet root sugar I ended up having to order 4 pounds of Confectioners Sugar on Amazon, shipping it directly to her house! Not only was the cake gorgeous, but it also tasted extremely good, although she made it gluten-free, egg-free and vegan, too! Even Tom who is very pick, agreed it was a very good cake and we only regret we didn't have a bigger cake!
